Anyone out there have some good dinner recipes?
Me and my fiancee are having our good friends over for dinner on Saturday night and I want to make something SPECTACULAR!!
We have been friends with them for 3 years, but they have never been over for dinner due to the size of our apartment. We just remodeled and added a kitchen island, so it's on for Saturday night!! I want to make something healthy but delicious and although I'm somewhat experienced in the kitchen, I don't want anything complicated.
(One of them is peruvian, so perhaps something with a latin flair?)
Any ideas???Anyone out there have some good dinner recipes?
Ceviche
1 1/2 pounds ono, mahimahi, or bluenose bass, diced
1/2 small red onion, halved and slivered
3/4 cup lime juice
1/2 teaspoon salt
1 habanero chile, seeded, halved, and thinly sliced (optional)
1 tablespoon aj铆 amarillo sauce (optional; see ';Peruvian Pantry,'; below)
1/2 cup cilantro leaves, chopped
1 orange sweet potato (such as Garnet or Jewel), boiled, peeled, and sliced
1 cob sweet corn, boiled and cut into 4 pieces
4 butter lettuce leaves
Preparation
1. Rinse diced fish and slivered red onion in cold water and dry thoroughly.
2. In a large bowl, combine fish, red onion, lime juice, salt, habanero (if using), and aj铆 amarillo sauce (if using). Cover and refrigerate 20 minutes.
3. Just before serving, stir in cilantro. Divide between 4 bowls and serve with sweet potato, corn, and lettuce leaves on the side.

marinate chicken (at least an hour, pref. overnight) in salt, pepper, olive oil, lime, tequila, jalepenos. Cover %26amp; Refrigerate.
Slow cook chicken for 4-8 hours, shred. Set aside. Cook rice and add approx. 1/3c of cilantro. Add sugar, cilantro, lime to black beans blend with rice. Set aside.
Pregrease baking dish add crushed tortilla chips to bottom of dish. Layer half of jack cheese, rice %26amp; black beans, shredded chicken, salsa, top with remaining cheese. Place in oven for 20 min. Let stand for 10 minutes %26amp; serve with sour cream %26amp; garnish with cilantro.

* 1 1/2 pounds large shrimp - peeled and deveined
* 1 1/2 pounds bay scallops

* 1 1/2 pounds cod fillets, cubed
Seafood is very healthy and all you need to do is serve it with crusty bread and for dessert maybe flan their are good Goya mixes for flan in the store. But one recipe I love is Paella

4. Spread rice mixture onto a serving tray. Top with meat and seafood mixture.
I love most seafood so you could add a white fish to this and mussels or clams to this. Again Crusty Bread is good to soak up juices. Saffron is expensive but lasts so long buy it and you can add to any rice dish very good.

That's a tough situation, girl! Well... I think your best bet would be to look for recipes that sound good, and then try to modify them so that they suit your diet. Here are some ideas I had:
You can make a burrito with rice, beans, cheese (can even get soy cheese if you want, i love Vegan Gormet brand), and whatever veggies you want-- zucchini, carrots, broccoli, cauliflower, even sweet potatoes are all super yummy in burritos. i've made this before without using any kind of salsa, because the flavors of the veggies after they have all cooked together is delicious, there's just no need.
You can also do a stir fry with tofu and veggies of your choice, maybe toss in some cabbage or bok choy too and serve with rice. A nice thai style peanut sauce would go great with that, and low acidity i would imagine.
Here's a recipe for a chickpea broccoli casserole I got from my cookbook ';Vegan with a Vengeance';. (It calls for onions, but you can obviously leave them out)
3 (16 oz) cans chickpeas, drained and rinsed
1 large onion, quarters and thinly sliced
3 large carrots, grated (about 2 cups)
1 head broccoli, cut into small florets (about 4 cups)
2 tablespoons thinly sliced chives
1/2 cup bread crumbs (preferably whole wheat)
2 tablespoons olive oil
1 cup vegetable broth
1 teaspoon salt
Preheat oven to 350 degrees F.
In a large bowl mash chickpeas well, using a potato masher or a firm fork; it takes about 2 minutes to get the right consistency. Add the vegetables and mix well. Add the bread crumbs and mix, then add the oil and mix again. Finally, add the vegetable broth and salt, and mix one last time. transfer all ingredients to a 9 x 13-inch glass or ceramic casserole dish. Press the mixture firmly into the casserole. Cover with foil, bake for 45 minutes. Uncover and bake for 15 minutes more.
Serve it hot the day of, but it tastes good cold as well.

4 field or portabello mushrooms, wiped and stalks removed
45ml/3tbsp olive oil
225g/8oz baby leaf spinach
40g/1 陆 oz walnuts, chopped
100g/4oz vegetarian Brie (or Blue Stilton), cut into small pieces
to taste salt and black pepper
to serve mixed salad leaves.
Method:
1. Heat the oil in a frying pan and fry the mushrooms on both sides until tender. Remove and place in a greased ovenproof dish in a single layer.
2. Wash the spinach and cook quickly in the water remaining on the leaves until wilted. Drain well and use to top each of the mushrooms.
3. Mix the walnuts and Brie together in a bowl and season well. Top the mushrooms with the mixture and place in a preheated oven (190/375/Gas 5) or under the grill and cook until the cheese is bubbling and golden.
4. Serve on a bed of mixed salad leaves.
Note- to make a vegan version, substitute 100g/4oz Swedish Soft (plain or garlic and herb).

bean curd until it slightly brown
2. Fry blended egg n shred it to similar size as other

3. Clean the pan/wok, re-heat wok/pan, put one table spoon
corn oil, put ginger until u can smell the ginger, put carrot,
celery, green pepper, corn and green beans. Quick stir n
put1/4 tea n put 1 to 2 tbsp water. Stir it well n dish up
after 2 mins.
4. Put all ingredients n sauce together stir it well in
one minute. Dish up

Here is a simple, yet unique meal that my family enjoys (I usually have green peppers, lime juice and add crushed red pepper, but of course I will leave those ingredients out for your benefit). Use any pasta noodles you like (I use whole wheat fettuccine), cook according to directions. And for the sauce, mix approx. 1 cup of peanut butter and a couple tablespoons or so of lite soy sauce. Stir until peanut butter is completely melted. Add any veggies that you like...hope this helps!

INGREDIENTS
* 1 tablespoon butter

* 1/4 cup heavy cream
* salt and pepper to taste
* 1/3 cup fine dry bread crumbs
* 2 tablespoons freshly grated Parmesan cheese
* 1/2 teaspoon dried oregano
* 1 egg, beaten
* 2 tablespoons milk
* 3 (5 ounce) skinless, boneless chicken breast halves
* 3 tablespoons olive oil
* 3/4 cup shredded Mozzarella cheese
* 1 tablespoon freshly grated Parmesan cheese
DIRECTIONS
1. Melt butter in a saucepan over medium heat. Stir in garlic and onion, and cook until the onion has softened and turned translucent, about 2 minutes. Pour in diced tomatoes and sugar. Increase heat to medium-high, and bring to a simmer, then reduce heat to medium-low, and continue simmering for 10 minutes, stirring occasionally. Once the sauce has simmered, stir in the cream and season to taste with salt and pepper. Simmer for an additional 3 minutes. Lower heat and keep sauce warm
2. Stir together bread crumbs, 2 tablespoons Parmesan cheese, and dried oregano; set aside. In a small bowl, whisk together egg and 2 tablespoons milk until blended. Dip chicken breasts into the egg, then press into breadcrumb mixture to coat both sides, shaking off excess.
3. Heat olive oil in a large skillet over medium heat. Add chicken breasts and cook on both sides until they reach an internal temperature of 160 degrees F (70 degrees C), and the bread crumb crust is golden brown, about 10 minutes.

INGREDIENTS
* 1 tablespoon butter
* 1 teaspoon minced garlic
* 1/3 cup minced onion
* 1 (14.5 ounce) can diced tomatoes with juice

* 1/4 cup heavy cream
* salt and pepper to taste
* 1/3 cup fine dry bread crumbs
* 2 tablespoons freshly grated Parmesan cheese
* 1/2 teaspoon dried oregano
* 1 egg, beaten
* 2 tablespoons milk
* 3 (5 ounce) skinless, boneless chicken breast halves
* 3 tablespoons olive oil
* 3/4 cup shredded Mozzarella cheese

DIRECTIONS

1/2 c Butter 1 c Butterscotch chips
1 1/2 c Graham cracker crumbs 1 c Walnuts, chopped
6 oz Semi-sweet chocolate chips, 1 c Sweetened condensed milk
1 c Coconut, shredded
Instructions for Magic Seven-Layer Bars
Melt butter in a 9 x 13 inch pan. Sprinkle crumbs over butter and add remaining ingredients in layers as given. Bake at 350 F for about 30 minutes. Makes about 40 bars Note: If you prefer a thicker bar, use a 9 x 9 inch pan. Bake 10 minutes longer.

Look for things in the frozen foods section that you can make in the microwave there are a bunch! Also you can make corn, baked beans, green beans, garlic toast, and I just made that really good shells and cheese Velveeta mac and cheese in the microwave they just made them and they are surprisingly good! If you cant use the microwave or toaster....your stuck with cereal, fruit, and sandwiches till you grow up...and that is just plain cruel!
