Anyone out there have some good dinner recipes?
Me and my fiancee are having our good friends over for dinner on Saturday night and I want to make something SPECTACULAR!!
We have been friends with them for 3 years, but they have never been over for dinner due to the size of our apartment. We just remodeled and added a kitchen island, so it's on for Saturday night!! I want to make something healthy but delicious and although I'm somewhat experienced in the kitchen, I don't want anything complicated.
(One of them is peruvian, so perhaps something with a latin flair?)
Any ideas???Anyone out there have some good dinner recipes?
Ceviche
1 1/2 pounds ono, mahimahi, or bluenose bass, diced
1/2 small red onion, halved and slivered
3/4 cup lime juice
1/2 teaspoon salt
1 habanero chile, seeded, halved, and thinly sliced (optional)
1 tablespoon aj铆 amarillo sauce (optional; see ';Peruvian Pantry,'; below)
1/2 cup cilantro leaves, chopped
1 orange sweet potato (such as Garnet or Jewel), boiled, peeled, and sliced
1 cob sweet corn, boiled and cut into 4 pieces
4 butter lettuce leaves
Preparation
1. Rinse diced fish and slivered red onion in cold water and dry thoroughly.
2. In a large bowl, combine fish, red onion, lime juice, salt, habanero (if using), and aj铆 amarillo sauce (if using). Cover and refrigerate 20 minutes.
3. Just before serving, stir in cilantro. Divide between 4 bowls and serve with sweet potato, corn, and lettuce leaves on the side.

marinate chicken (at least an hour, pref. overnight) in salt, pepper, olive oil, lime, tequila, jalepenos. Cover %26amp; Refrigerate.
Slow cook chicken for 4-8 hours, shred. Set aside. Cook rice and add approx. 1/3c of cilantro. Add sugar, cilantro, lime to black beans blend with rice. Set aside.
Pregrease baking dish add crushed tortilla chips to bottom of dish. Layer half of jack cheese, rice %26amp; black beans, shredded chicken, salsa, top with remaining cheese. Place in oven for 20 min. Let stand for 10 minutes %26amp; serve with sour cream %26amp; garnish with cilantro.

* 1 1/2 pounds large shrimp - peeled and deveined

* 1 1/2 pounds cod fillets, cubed
Seafood is very healthy and all you need to do is serve it with crusty bread and for dessert maybe flan their are good Goya mixes for flan in the store. But one recipe I love is Paella

I love most seafood so you could add a white fish to this and mussels or clams to this. Again Crusty Bread is good to soak up juices. Saffron is expensive but lasts so long buy it and you can add to any rice dish very good.

That's a tough situation, girl! Well... I think your best bet would be to look for recipes that sound good, and then try to modify them so that they suit your diet. Here are some ideas I had:
You can make a burrito with rice, beans, cheese (can even get soy cheese if you want, i love Vegan Gormet brand), and whatever veggies you want-- zucchini, carrots, broccoli, cauliflower, even sweet potatoes are all super yummy in burritos. i've made this before without using any kind of salsa, because the flavors of the veggies after they have all cooked together is delicious, there's just no need.
You can also do a stir fry with tofu and veggies of your choice, maybe toss in some cabbage or bok choy too and serve with rice. A nice thai style peanut sauce would go great with that, and low acidity i would imagine.
Here's a recipe for a chickpea broccoli casserole I got from my cookbook ';Vegan with a Vengeance';. (It calls for onions, but you can obviously leave them out)
3 (16 oz) cans chickpeas, drained and rinsed
1 large onion, quarters and thinly sliced
3 large carrots, grated (about 2 cups)
1 head broccoli, cut into small florets (about 4 cups)
2 tablespoons thinly sliced chives
1/2 cup bread crumbs (preferably whole wheat)
2 tablespoons olive oil
1 cup vegetable broth
1 teaspoon salt
Preheat oven to 350 degrees F.
In a large bowl mash chickpeas well, using a potato masher or a firm fork; it takes about 2 minutes to get the right consistency. Add the vegetables and mix well. Add the bread crumbs and mix, then add the oil and mix again. Finally, add the vegetable broth and salt, and mix one last time. transfer all ingredients to a 9 x 13-inch glass or ceramic casserole dish. Press the mixture firmly into the casserole. Cover with foil, bake for 45 minutes. Uncover and bake for 15 minutes more.
Serve it hot the day of, but it tastes good cold as well.

4 field or portabello mushrooms, wiped and stalks removed
45ml/3tbsp olive oil
225g/8oz baby leaf spinach
40g/1 陆 oz walnuts, chopped
100g/4oz vegetarian Brie (or Blue Stilton), cut into small pieces
to taste salt and black pepper
to serve mixed salad leaves.
Method:
1. Heat the oil in a frying pan and fry the mushrooms on both sides until tender. Remove and place in a greased ovenproof dish in a single layer.
2. Wash the spinach and cook quickly in the water remaining on the leaves until wilted. Drain well and use to top each of the mushrooms.
3. Mix the walnuts and Brie together in a bowl and season well. Top the mushrooms with the mixture and place in a preheated oven (190/375/Gas 5) or under the grill and cook until the cheese is bubbling and golden.
4. Serve on a bed of mixed salad leaves.
Note- to make a vegan version, substitute 100g/4oz Swedish Soft (plain or garlic and herb).

3. Clean the pan/wok, re-heat wok/pan, put one table spoon
corn oil, put ginger until u can smell the ginger, put carrot,
celery, green pepper, corn and green beans. Quick stir n
put1/4 tea n put 1 to 2 tbsp water. Stir it well n dish up
after 2 mins.
4. Put all ingredients n sauce together stir it well in
one minute. Dish up

Here is a simple, yet unique meal that my family enjoys (I usually have green peppers, lime juice and add crushed red pepper, but of course I will leave those ingredients out for your benefit). Use any pasta noodles you like (I use whole wheat fettuccine), cook according to directions. And for the sauce, mix approx. 1 cup of peanut butter and a couple tablespoons or so of lite soy sauce. Stir until peanut butter is completely melted. Add any veggies that you like...hope this helps!

INGREDIENTS
* 1 tablespoon butter

* 1/4 cup heavy cream
* salt and pepper to taste
* 1/3 cup fine dry bread crumbs
* 2 tablespoons freshly grated Parmesan cheese
* 1/2 teaspoon dried oregano
* 1 egg, beaten
* 2 tablespoons milk
* 3 (5 ounce) skinless, boneless chicken breast halves
* 3 tablespoons olive oil
* 3/4 cup shredded Mozzarella cheese
* 1 tablespoon freshly grated Parmesan cheese
DIRECTIONS
1. Melt butter in a saucepan over medium heat. Stir in garlic and onion, and cook until the onion has softened and turned translucent, about 2 minutes. Pour in diced tomatoes and sugar. Increase heat to medium-high, and bring to a simmer, then reduce heat to medium-low, and continue simmering for 10 minutes, stirring occasionally. Once the sauce has simmered, stir in the cream and season to taste with salt and pepper. Simmer for an additional 3 minutes. Lower heat and keep sauce warm
2. Stir together bread crumbs, 2 tablespoons Parmesan cheese, and dried oregano; set aside. In a small bowl, whisk together egg and 2 tablespoons milk until blended. Dip chicken breasts into the egg, then press into breadcrumb mixture to coat both sides, shaking off excess.
3. Heat olive oil in a large skillet over medium heat. Add chicken breasts and cook on both sides until they reach an internal temperature of 160 degrees F (70 degrees C), and the bread crumb crust is golden brown, about 10 minutes.

INGREDIENTS
* 1 tablespoon butter
* 1 teaspoon minced garlic
* 1/3 cup minced onion
* 1 (14.5 ounce) can diced tomatoes with juice

* 1/4 cup heavy cream
* salt and pepper to taste
* 1/3 cup fine dry bread crumbs
* 2 tablespoons freshly grated Parmesan cheese

* 1 egg, beaten
* 2 tablespoons milk
* 3 (5 ounce) skinless, boneless chicken breast halves
* 3 tablespoons olive oil
* 3/4 cup shredded Mozzarella cheese

DIRECTIONS

Mushroom Risotto is a wonderful birthday treat- serve with a large tossed italian salad, some crispy breadsticks, and poached pears in red wine sauce for dessert- hm, I may need to forward this to my daughter as Mother's day is coming up!
WIld Mushroom Risotto
5 cups canned low-salt chicken broth
1/2 ounce dried porcini mushrooms,* rinsed
2 tablespoons (1/4 stick) butter
1 tablespoon extra-virgin olive oil
2 1/2 cups finely chopped onions
12 ounces crimini mushrooms, finely chopped
2 large garlic cloves, minced
1 tablespoon minced fresh thyme
1 tablespoon minced fresh marjoram
1 1/2 cups arborio rice or medium-grain white rice
1/2 cup dry white wine
1/2 cup grated Parmesan cheese
Additional grated Parmesan cheese
Bring broth to simmer in heavy medium saucepan. Add porcini and simmer until just tender, about 2 minutes. Using slotted spoon, transfer mushrooms to plate. Cool mushrooms and chop finely. Cover broth and keep warm over very low heat.

Poached Pears in Red Wine Cardamom Sauce
1 750-ml bottle dry red wine
2 1/4 cups sugar
2 cups water
1/2 cup orange juice
2 teaspoons grated orange peel
1 teaspoon ground cardamom
1 cinnamon stick
4 firm but ripe pears, peeled, stems left intact
1 pint vanilla ice cream
1 plain or almond biscotti, crumbled
Orange peel strips (optional)
Combine first 7 ingredients in heavy large saucepan. Stir over medium heat until sugar dissolves and mixture comes to simmer. Add pears and return mixture to simmer. Reduce heat and simmer slowly until pears are tender when pierced with knife, about 25 minutes. Transfer pears to plate. Boil liquid in saucepan until reduced to 3 cups, about 20 minutes. (Can be made 1 day ahead. Cover and chill pears in poaching liquid. Before serving, rewarm over medium-low heat until pears are heated through.)

8 ounces uncooked Linguini
4 slices Bacon, cut into 1/2'; pieces
1 1/2 cups frozen Stir-fry Peppers
1 1/2 cup cubed cooked Chicken
1 C. whipping cream
1/2 C. sliced fresh mushrooms
1 T. parsley flakes
1/2 teaspoon Salt
1/8 teaspoon White Pepper
Directions:
Cook linguini according to package directions, rinse with hot water and keep warm.
Cook bacon in large skillet until crisp, remove from skillet , set aside, and drain all fat from skillet except 1 Tbsp. .
Add peppers and mushrooms to drippings; stir-fry 3 to 5 minutes until tender-crisp.

boiled sliced potatoes
chopped mushrooms
chopped onions
a cup of cream
an egg
grated cheese
sunflower seeds
salt and pepper
fry mushrooms with onions. place a layer of sliced potatoes in a baking dish. put mushrooms/onions on top. grated cheese on top. mix cream with egg, salt and pepper, pour on top. dip the remaining potatoes in oil and layer on top of the whole thing. sprinkle with sunflower seeds and bake for about 40 minutes. sounds very simple but tastes wonderful!

buy some boneless skinless chicken breast whole mushrooms and some monteray jack cheese
fry the chicken breast on the stove just like normal with no breading while the chicken is cooking rinse the mushrooms and slice them up. put a couple of tbs. of butter in a skillet and melt it then add your mushrooms and cook untill tender. shredd the cheese. when your chicken is done put a little cheese on it and some mushrooms then a little more cheese on top and let the cheese melt. these are so good and if you don't like the mushrooms you can leave them off of some of the pieces.

1/4 cup chopped red pepper
2 cloves garlic, minced
2 bags (10 oz. each) fresh spinach
1/4 cup KRAFT 100% Grated Parmesan Cheese
PREHEAT oven to 375掳F. Twist or cut off stems from mushrooms. Chop stems; set aside. Use a spoon or sharp knife to scrape out the gills from mushroom caps; discard gills. Brush 1 Tbsp. of the dressing onto rounded sides of mushroom caps; place, rounded sides down, in foil-lined 15x10x1-inch baking pan.
HEAT remaining 3 Tbsp. dressing in Dutch oven on medium-high heat. Add mushroom stems, red pepper and garlic; cook and stir 2 min. Add spinach. Reduce heat to medium-low; cover and simmer 4 min. or until spinach is wilted, stirring after 2 min. Spoon evenly over mushroom caps; sprinkle with cheese.

1 cup water
1/2 cup dried shiitake mushrooms
2 cups chicken broth
2 cups mushroom broth
1 1/4-inch or 3-cm grated fresh ginger
2 garlic cloves-thinly sliced
4 oz crimini mushrooms thickly sliced
1/2 tbsp onion powder
1 tbsp soy sauce
3 oz rice verimicelli
3 scallions thinly sliced
chopped fresh cilantro
Bring water to boil in a large sauce pan. Remove from heat and add shiitake mushrooms. Let soak for 10 min, then remove the mushrooms from the water with a slotted spoon. Chop coarsly, set aside. Strain the mushroom water to remove any dirt or grit, and pour into a clean pan.
Add broths to the mushroom liquid, and bring to a boil. Add the ginger, garlic, soy sauce, and mushrooms.
Menwhile, soak the noodles in a bowl of hot water for about 10 min (or according to package directions). Drain and add tp the soup, let simmer for about 3 more minutes. Sprinkle with scallians and serve with a little parsley for garnish.
****If using a granule for the chicken or mushroom base then reserve some liquid from the noodles to add to the soup for a little extra body to the broth.
Wild Mushroom Pizza:
1 tsp olive oil
1 can (13.8oz) refridgerated pizza crust
1 tbsp butter
1 lb fresh wild mushrooms (shitake, oyster, crimini) cut into 1/4 slices
1 tsp dried thyme leaves crushed
Salt and Pepper to taste
1 8oz pkg cream cheese softened
4 oz fontina cheese shredded
1 cup shredded mozzerela
fresh thyme leavesif desired
1. Heat oven to 400. Brush large cookie sheet with oil. Unroll dough and place on cookie sheet. Starting at center press dough out to 15x10inche rectangle. Bake 8 to 10 min or until criust is lightly browned.
2. Meanwhile in skillet heat butterover med-high heat. Add mushrooms, cook about 6min, stirring frequently until well browned, drain. Stir in salt and pepper.
3. Spread cream cheese evenly on the crust. Sprinkle with fontina, cheese. Spread cooked mushrooms over fontina cheese and sprinkle with mozz cheese.
4. Bake 10-12 min longer or until cheese is melted and crust is brown. Cut into 8 rows by 6 rows, sprinlkle with fresh thyme leaves if desired.
Serve 1 or 2 small slices per person.

1 clove garlic finely chopped
14 bay scallops (1/4 to 1/3 lb)
14 baby portabella mushrooms
14 slices precooked bacon (or you could try lightly frying the bacon, or even boiling it first)
fresh orange curls if desired for garnish.
1. Heat oven to 425. Line a cookie sheet with parchment paper. In medium bowl mix orange juice, brown sugar, orange peel,ginger, and garlic. Add scallops and toss to coat.
2. Place 1 scallop in each mushroom cup. Wrap each with 1 slice bacon, enclosing the scallop. Secure with a toothpick, Dip in orange juice mix and place on pan.
3. Bake 8 to 10 min or until mushrroms are tender, scallops are opaque, and bacon is crispy.

I'm a college student and I like to cook meals, I am just out of ideas. I've cooked chicken with mixed bbq and mesquite seasoning breading. Also lemon pepper season with chicken. Anyone else have good recipes.

Elegant and easy!
Chili dogs. Potato salad with fried chicken. Tuna casserole (-:. Spaghetti and meatballs (bake the meatballs -- it's super easy that way! And no burning!). Salad Nicoise (basically, a can of tuna, some boiled potatoes, green beans, pretty veggies like radish or carrot slices, some cheese, whatever). Chef salad. Beef stew.

1 thin beef steak

3 c. rigatoni

Cook uncovered until water comes to a full rolling boil for 10-11 minutes, stir occasionally. Drain and rinse under hot water. In a large bowl, combine cooked rigatoni, ham and 1 cup cheese. In a medium saucepan, mix milk with alfredo sauce. Combine sauce with rigatoni mixture. Turn into 2 quart casserole. Sprinkle with ritz crackers and dot with butter. Bake at 350 degrees for 25-30 minutes.

4-6 chicken breasts
3 eggs plus 1 tablespoon water, beaten
1 1/2 cups breadcrumbs plus 1/3 cup grated parmesan cheese
1 jar favorite spaghetti or maranara sauce
Sliced Mozarella cheese
Place each breast between two pieces of saran wrap and pound thin using a meat hammer, rolling pin or a heavy can. Heat two tablespoons of oil in a skillet. Dip breast in the mixture of breadcrumbs and parmesan, into the egg wash and into the breadcrumbs again. Place in skillet and brown on each side, 2 to three minutes. Place in baking dish and cover with maranara sauce. Bake at 350 degrees for 30-45 minutes until chicken is cooked through. Place mozarella slices over breasts. Place under broiler 5-7 minutes until cheese is melted and bubbly and lightly browned.

1 pound small red potatoes, cut into 1-inch chunks
1 tablespoon water

Stuffed Chicken Breast
Ingredients:
4 small boneless, skinless chicken breasts
1/4 teaspoon each: salt, onion powder and dried dill weed
1 (10 ounce) package frozen asparagus spears, thawed and drained
1/2 medium red bell pepper, seeded and cut into thin strips
Mock Hollandaise sauce
Ingredients:
2 tablespoons reduced-fat margarine
1 tablespoon all-purpose flour
1/4 teaspoon salt
2/3 cup non-fat milk
1 egg yolk
1/2 teaspoon grated lemon peel
2 teaspoons lemon juice
Prep:
Heat oven to 375 degrees. Flatten each chicken breast to 1/4 inch thickness between waxed paper. Mix salt, pepper, onion powder and dill weed and sprinkle on top of chicken breasts. Place 1/4 of the asparagus spears and pepper strips on one end of the chicken breast. Tightly roll each chicken breast and secure with toothpicks. Place chicken seam side down, on baking pan that has been sprayed with nonstick spray. Cover and bake about 30 minutes or until chicken is no longer pink.
Mock Hollandaise Sauce:
Heat margarine in a small saucepan over low heat until melted. Stir in flour and salt and cook over low heat until smooth, stirring constantly. Remove from heat. Mix milk, egg yolk and lemon juice until smooth and stir into flour mixture. Heat to boiling, stirring constantly.
Makes 4 Servings
If you ever start using a crock pot, you'll love it! Just throw the ingredients in the pot in the morning, turn it on, and by dinner it will be ready!! And you only have to clean one pot!! Here a few, easy starter recipes!!
Chicken with onions, carrots and potatos
1 whole chicken
1-2 onion, cut in chunks
4-6 potatoes, cut in chunks,don't peel (optional)
carrots (I use a large handful of baby carrots)
Put carrots and onions and potatoes (if used) in bottom of crock pot.
Place rinsed out chicken on top of veggies.
Move around if needed to close lid.
Sprinkle a little salt and pepper on chicken.
Do not add any liquid.
Close lid and cook on low about 7 hours.
Serve with mashed potatoes (if you didn't cook any with chicken.) You can also create a sauce by removing everything to serving dish and then adding cream of chicken/mushroom soup using the broth to thin to the right texture.
The chicken will fall apart.
Crock pot chili
1-1 1/2 lb ground beef
1 onion, sliced
2-3 cloves garlic (minced)
2 (29 ounce) cans tomato sauce
1 can dark red kidney beans
1 package chili seasoning mix
chili powder
cayenne pepper (powder)
Brown the beef in a skillet, add onion and garlic while beef is browning-- also season with chili powder and cayenne pepper (to taste) Add beef mixture to crock pot, add tomato sauce, beans, and chili seasoning.
Cook on high 4-6 hours.
Crockpot Hawaiian chicken
5 servings 6录 hours 5 min prep
1 can Sprite (soda)
1 jar barbecue sauce (I use the sweet stuff with honey)
5 boneless skinless chicken breasts

cooked white rice
place cleaned chicken breast on bottom of crockpot, mix together sprite, BBQ sauce and pour over chicken, I put in the pineapple when chicken was 1/2 way done, cook on low for 6 hours now when it all done the sauce is thin and I added alittle cornstarch to thicken it up and it turned out perfect.
In the crockpot when it was all done I took a fork and kinda pulled the chicken apart.
I served this over the white rice.
here is one 1 . 1 1lb hamburger cooked, 2. a family size package of mac and cheese cooked as package directions and 1 teaspoon oregano and basil. add hamburger to mac and cheese dinner and add oregano and basil. seve with corn bread and salad and enjoy

3 tbsp. butter
3 tbsp. flour
2 c. milk
4-5 lg. baking potatoes

here's a really good recipe,
ingredients:
1 1/2 cups of rice
4 tyson mesquite grilled chicken breast
3/4 lbs of mixed frozen vegetables
1 stick of butter or margarine
1 large onion
3 cups of water
5 table spoons of soy sauce
ok to start add 1/2 of the stick of butter into a pot to fry the rice, when the rice starts looking kinda clear, cut half of the onion into small pieces and put it into the rice. let it fry until you notice that the rice is going to start turning light brown, then add the 3 cups of water and cover the pot on medium heat. while thats on, place 4-5 pieces of the tyson chicken breast on the microwave for 3 mins or until defrosted. after cut them into medium squares and take out a pan and place on high and add the rest of the butter into the pot and place the chicken into the pan also. by then the water in the rice should be boiling and starting to get soaked up by the rice, turn off heat to the rice and let sit with the lid on it (do not take the lid off). When that you see the chicken is about to turn light brown dice the rest of the onion and place in the pan to fry for a little while or until the onion starts to look clear, when that happens put the 3/4 lbs of vegetables into the pan and pour the soy sauce over the vegetables and cover the pan and let sit on medium heat for 15-20 mins. after you see that 15 mins have passed by check the vegetables and mix the chicken and vegetables and cover for about 2-5 mins. when the vegetables are done, place rice and the chicken and vegetables in a plate or bown and eat up.... its a fast recipe that i like.... i came up with it so i hope you like it.......big brother myspace

Heat oven to 350 degrees. Combine potatoes and water in a large bowl; microwave on high for 3 or 4 minutes or until potatoes are tender; drain. In a small bowl, mix soup and milk until smooth. Add soup mixture, chicken and remaining ingredients to potatoes; mix well. Transfer mixture to a 9-by-13-inch baking dish coated with cooking spray. Bake, uncovered, 50 to 55 minutes or until chicken is no longer pink.

1/2 cup pizza or pasta sauce

Stuffed Chicken Breast
Ingredients:
4 small boneless, skinless chicken breasts
1/4 teaspoon each: salt, onion powder and dried dill weed
1 (10 ounce) package frozen asparagus spears, thawed and drained
1/2 medium red bell pepper, seeded and cut into thin strips
Mock Hollandaise sauce
Ingredients:
2 tablespoons reduced-fat margarine
1 tablespoon all-purpose flour
1/4 teaspoon salt
2/3 cup non-fat milk
1 egg yolk
1/2 teaspoon grated lemon peel
2 teaspoons lemon juice
Prep:
Heat oven to 375 degrees. Flatten each chicken breast to 1/4 inch thickness between waxed paper. Mix salt, pepper, onion powder and dill weed and sprinkle on top of chicken breasts. Place 1/4 of the asparagus spears and pepper strips on one end of the chicken breast. Tightly roll each chicken breast and secure with toothpicks. Place chicken seam side down, on baking pan that has been sprayed with nonstick spray. Cover and bake about 30 minutes or until chicken is no longer pink.
Mock Hollandaise Sauce:
Heat margarine in a small saucepan over low heat until melted. Stir in flour and salt and cook over low heat until smooth, stirring constantly. Remove from heat. Mix milk, egg yolk and lemon juice until smooth and stir into flour mixture. Heat to boiling, stirring constantly.
Makes 4 Servings
If you ever start using a crock pot, you'll love it! Just throw the ingredients in the pot in the morning, turn it on, and by dinner it will be ready!! And you only have to clean one pot!! Here a few, easy starter recipes!!
Chicken with onions, carrots and potatos
1 whole chicken
1-2 onion, cut in chunks
4-6 potatoes, cut in chunks,don't peel (optional)
carrots (I use a large handful of baby carrots)
Put carrots and onions and potatoes (if used) in bottom of crock pot.
Place rinsed out chicken on top of veggies.
Move around if needed to close lid.
Sprinkle a little salt and pepper on chicken.
Do not add any liquid.
Close lid and cook on low about 7 hours.
Serve with mashed potatoes (if you didn't cook any with chicken.) You can also create a sauce by removing everything to serving dish and then adding cream of chicken/mushroom soup using the broth to thin to the right texture.
The chicken will fall apart.
Crock pot chili
1-1 1/2 lb ground beef
1 onion, sliced
2-3 cloves garlic (minced)
2 (29 ounce) cans tomato sauce
1 can dark red kidney beans
1 package chili seasoning mix
chili powder
cayenne pepper (powder)
Brown the beef in a skillet, add onion and garlic while beef is browning-- also season with chili powder and cayenne pepper (to taste) Add beef mixture to crock pot, add tomato sauce, beans, and chili seasoning.
Cook on high 4-6 hours.
Crockpot Hawaiian chicken
5 servings 6录 hours 5 min prep
1 can Sprite (soda)
1 jar barbecue sauce (I use the sweet stuff with honey)
5 boneless skinless chicken breasts
1 can pineapple chunks, drained
cooked white rice
place cleaned chicken breast on bottom of crockpot, mix together sprite, BBQ sauce and pour over chicken, I put in the pineapple when chicken was 1/2 way done, cook on low for 6 hours now when it all done the sauce is thin and I added alittle cornstarch to thicken it up and it turned out perfect.
In the crockpot when it was all done I took a fork and kinda pulled the chicken apart.
I served this over the white rice.
here is one 1 . 1 1lb hamburger cooked, 2. a family size package of mac and cheese cooked as package directions and 1 teaspoon oregano and basil. add hamburger to mac and cheese dinner and add oregano and basil. seve with corn bread and salad and enjoy

here's a really good recipe,
ingredients:
1 1/2 cups of rice
4 tyson mesquite grilled chicken breast
3/4 lbs of mixed frozen vegetables
1 stick of butter or margarine
1 large onion
3 cups of water
5 table spoons of soy sauce
ok to start add 1/2 of the stick of butter into a pot to fry the rice, when the rice starts looking kinda clear, cut half of the onion into small pieces and put it into the rice. let it fry until you notice that the rice is going to start turning light brown, then add the 3 cups of water and cover the pot on medium heat. while thats on, place 4-5 pieces of the tyson chicken breast on the microwave for 3 mins or until defrosted. after cut them into medium squares and take out a pan and place on high and add the rest of the butter into the pot and place the chicken into the pan also. by then the water in the rice should be boiling and starting to get soaked up by the rice, turn off heat to the rice and let sit with the lid on it (do not take the lid off). When that you see the chicken is about to turn light brown dice the rest of the onion and place in the pan to fry for a little while or until the onion starts to look clear, when that happens put the 3/4 lbs of vegetables into the pan and pour the soy sauce over the vegetables and cover the pan and let sit on medium heat for 15-20 mins. after you see that 15 mins have passed by check the vegetables and mix the chicken and vegetables and cover for about 2-5 mins. when the vegetables are done, place rice and the chicken and vegetables in a plate or bown and eat up.... its a fast recipe that i like.... i came up with it so i hope you like it.......

Brown up the sausages in olive oil, remove them from the oil, slice them up and return them to the pan with chopped onions, slices of mushrooms, crushed garlic, basil and marinara sauce. Heat everything through, season to taste and add in the pasta. Top off with pecorino romano cheese.

toss in some frozen peas then toss the cooked pasta in and top with grated cheese
1 pound of pasta fed 6 people for dinner! no leftovers so i know it ws good

My family loves this one and its really quick.
Ingredients:
1 package Polska kielbasa, cut into bite sized pieces- I prefer the turkey kind but any will do
1 package Rotini noodles- the tri-colored ones makes this dish pretty
1 can Italian Stewed Tomatoes- if you can't find Italian stewed, regular stewed tomatoes will work and you can add some Italian seasoning
1 can Italian cut green beans (regular cut or French will also work); DRAINED
Lightly brown the Kielbasa in frying pan- no oil needed. Drain if necessary. Add the tomatoes and let it simmer while the noodles are cooking (cook according to package directions). I usually add some crushed red pepper flakes because my family likes it hot. Just before the noodles are ready, add the green beans to the pan but DO NOT STIR THEM IN. You just want them to warm.
To serve- place noodles on individual serving plates and top with the Kielbasa mixture. My son likes to sprinkle grated Parmesan cheese on top. Serve with a small salad and some bread sticks.
Take one small box of that Mac and cheese mix. Boil the Macaroni and throw away the cheese mix! Run under cold water to cool down and drain. Add 1 can tuna, drained, 1/4 cup chopped sweet pickles, 3/4 - 1 cup cubed Cheddar Cheese, 1/2 cup chopped Onion, 1/2 - 3/4 cup Mayonnaise, and salt and pepper to taste. Combine all ingredients, chill and enjoy. Great with crackers.
BLTs are always good you just toast bread fry bacon cut tomatoe and but lettuce on the toast and the bacon and tomatoe. Also you can add mayo if you want. Have that as the main course and then have fruit and veggies for a side. Potato sald is good as a side with BLTs too!

I am trying to lose weight for september 3 (back to school) and i am even drinking a slimming tea. I am SO hungry but i dont know what to eat, i already hade lunch, so i am eating rice cakes. Pan sear it (regular fillet should only be 2-3 minutes per a side so its quick to make) and put it over a small salad. My son loves to help me cook, and got some play cooking utensils for Christmas, and im sick of cookes, brownies and the like. I would suggest subscribing to Kraft Foods Food and Family magazine. It is free and it comes out quarterly. There are many recipes in there just for kids to help with. You can also find them online at kraftfoods.com. I hope this helps. I don't know any off the top of my head, but this magazine helps me out a great deal. It really simplifies things. My soon to be 3 year old (b'day is on Wednesday actually : ) just loves helping me cook too! He isn't fussy with what he gets to do. He just loves being in the kitchen, helping. I mean, it could be any thing from washing peeled potatoes, to putting cut veges into the pot. From sifting the dry ingredients to scooping out the end of the batter (before licking the spoon)
But the ';recipe'; he helps out most with would be making/well prepping, french toast (which isn't a bad dinner for him if he had veges and a little meat for lunch)
He uses cookie cutters to cut the bread into which ever the shapes he wants to eat.
He gently smashes the egg on the bench top (one of his favorite parts)
I open it into the bowl
He adds about a tablespoon of milk (which i previously pour in to a cup - he drinks the rest)
He adds a little pepper and garlic powder (you could cinnamon instead of garlic and pepper) He shakes a bit on a saucer first - just to be safe
He mixes it up
He even dips the bread, all ready for me to cook.
Its his pride and joy!

I like to make Southwestern Mac N Cheese. All you need is a box of Mac n Cheese and a can of chili. mix them together and you have a meal!
Also- I like to make pancakes with chocolate chips. Same thing- mix them both and cook.

Every Friday night, I have ';Make Your Own Pizza Night,'; where the kids literally make their pizza any way they like it. I simply buy ';Kontos'; Pizza Parlor Crust and cut some onion up, slice some pepperoni or whatever toppings are desired. I let the kids put their own sauce on (squeeze bottle), their own cheese and desired toppings/herbs/spices. They love it, they have fun and it's a healthy meal.
How about meatballs. He can help squish the meat and roll the balls.
Hi nikki, this is actually an answer to your last question. I have found the book ...';Difficult to delightful in 30 days'; to be a GREAT book. It worked really well for the little girl I nanny for. We all read to the book and followed the instructions, and she is SOOOOO much better now. Hope that helps. :)

Beef Stroganoff
1 1/2 lbs. ground beef
1 can cream of mushroom soup
1 pkg. egg noodles
salt
pepper
1/2 cup onion
1 can mushrooms
1 can beef broth
Bread
Put ground beef %26amp; onion in crockpot, except bread OR noodles. Add beef broth, combine all ingredients together in crockpot. Add salt and pepper to taste.
Let sit for a few hours or overnight. Boil noodles on stove per package directions.
Toast bread in toaster. Put bread on a plate, cover w/noodles %26amp; then w/beef mixture. EnjoyHas anyone got any easy dinner recipes to make with out the use of an oven?

couscous would be good i think, you just need to get the water to boiling and pour over the couscous and cover for 10 minutes and its done. so you could use a microwave to get the water ready for it too.

you'd be surprised at how many things you can make without an oven. Marinate thinly sliced chicken breast over night (I prefer balsamic vinagrette marinade), pan sear it (usually just takes a few minutes on either side, depending on how thick the meat is). You could make mashed potatoes to go with it, a pot of green bean, or practically any canned veggies. You could also make mac and cheese, or boil a pot of noodles and serve the chicken over pasta.
As everyone else has said, stir-fry would be great. I also love making skillet fajitas. If you're worried you want make them right, you can by the frozen prepared fajitas and all you'd have to do is toss them around in the pan. Fried rice, burgers......my boyfriend even made pizza on a skillet once (using it as a grill).
Keep grilling in mind too. It's usually more of the guys forte, but everything tastes amazing on the grill! In the summer, my bf and I make literally just about everything on the grill (even apple cobbler!) You can find all sorts of recipes online, or you can simply by a frozen version and let it warm over the grill.
There are tons of no-bake desserts you can buy at the grocery store (I think Jell-o makes them?) They're actually really good, and my personal favorite is the peanut butter cup. Anyway, if all else fails, offer to make dinner at your house, or cook at home, put it in portable containers, and just heat the stuff over the skillet once you get to his house. it also wouldn't hurt to invest in a crockpot or a toaster oven (they're only about 20 bucks), and they do everything an oven does

Southern Skillet Dinner
2 pounds ground beef
3 (15 ounce) cans sliced potatoes, drained
2 (10.5 ounce) cans cream of mushroom soup
1 (10 ounce) can whole kernel corn, drained
1 (10 ounce) can peas, drained
salt and pepper to taste
Brown beef in a large skillet over medium heat. Drain fat, and return skillet to stove. Stir in potatoes, cream of mushroom soup, corn, and peas. Sprinkle with salt and pepper. Cover, and simmer over low heat for 10 to 15 minutes.

1/2 pound dried elbow macaroni
1 pound ground beef
2 cloves garlic, pressed or minced
2 medium carrots, quartered lengthwise and sliced
1 large zucchini, quartered lengthwise and sliced
1 1/2 tablespoons dried oregano leaves
salt and pepper
1 (10.75 ounce) can condensed tomato soup, plus
1 (10.75 ounce) can water
crumbled feta cheese (optional)
Bring a large pot of lightly salted water to a boil. Cook elbow macaroni for 8 to 10 minutes or until al dente; drain, and set aside.
Brown ground beef with garlic in a large skillet over medium heat. Strain off fat, if necessary. When meat is lightly browned, add carrots and cook until tender, about 5 minutes. Stir in zucchini and oregano, and continue cooking another 5 minutes. Season to taste with salt and pepper.
When vegetables are tender, stir in tomato soup, water, and prepared elbow macaroni, and cook for another 5 to 10 minutes. Serve with crumbled feta cheese on top, if desired.

4 tablespoon olive oil or vegetable oil
4 bone-in pork chops, 3/4-inch thick
1 medium onion, chopped
1 cup uncooked regular long-grain white rice
1 (10.75 ounce) can Campbell's庐 Condensed Chicken Broth
1 cup orange juice
3 tablespoons chopped fresh parsley
4 orange slices
Heat oil in skillet. Add chops and cook until browned.
Add onion and rice and cook until rice is browned. Stir in broth, orange juice and 2 tablespoons parsley. Heat to a boil. Cover and cook over low heat 20 minutes or until done.
Top with orange slices and sprinkle with remaining parsley.

8 ounces uncooked rotini pasta

12 oz. jar salsa (1-1/2 cups)
1 cup water
1 Tbsp. chili powder
1 (15 oz) cans black beans, rinsed and drained
1 cup small curd cottage cheese
1 (8 oz.) pkg. cream cheese, softened
1/2 cup shredded Pepper Jack cheese
2 Tbsp. chopped fresh cilantro
1/2 tsp. cumin
1/2 cup Parmesan cheese
1 cup shredded Pepper Jack cheese
1-2 avocados, sliced
1/2 pint cherry tomatoes, chopped
Preparation:
In heavy skillet, brown ground beef with onions and garlic. Drain well. Stir in uncooked noodles, pasta sauce, salsa, water, chili powder, and drained beans. Bring to a boil, then lower heat, cover skillet, and cook for 15-17 minutes until noodles are al dente, stirring frequently.
Meanwhile, combine cottage cheese, cream cheese, 1/2 cup Pepper Jack cheese, cilantro, and cumin in small bowl until blended.
Spoon the cottage cheese mixture evenly over cooked mixture in skillet. Sprinkle with Parmesan cheese and 1 cup Pepper Jack cheese. Ingredients:
2 packages chicken flavor ramen noodle soup mix
3 cups boiling water
2 tablespoons cornstarch
2 cups chicken broth
1 red bell pepper, sliced
1 yellow bell pepper, sliced
3 cloves garlic, minced
2 cups snow peas
2 cups sliced mushrooms
2 tablespoons olive oil
1-1/2 pounds boneless, skinless chicken breasts, sliced
2 tablespoons low-sodium soy sauce
Preparation:
Break noodles into a large bowl, sprinkle with 1 seasoning packet and cover with boiling water. Set aside. Combine cornstarch and chicken broth and set aside.
Prepare all the vegetables and the chicken. Heat 1 tablespoon oil in wok or large, heavy skillet. Stir-fry peppers, garlic, snow peas and mushrooms until crisp tender. Remove from skillet and set aside.
Add remaining 1 tablespoon oil to wok and heat. Stir-fry chicken slices until cooked, about 3-5 minutes.

1 cup frozen peas
6 oz. pkg. couscous
Preparation:
In large saucepan saute onion and bell pepper in olive oil until crisp tender. Add broth, curry powder, shrimp, and peas. Bring to boiling, then add couscous and stir well. Cover and remove pan from heat. Let stand 4-6 minutes, covered, until liquid is absorbed and couscous is tender. Stir and serve. 4 servings

Ingredients:
1 Tbsp. oil
1 lb. beef sirloin steak, partially frozen, sliced into thin strips
1 onion, chopped
1 green bell pepper, chopped
1-1/2 cups water
14 oz. can diced tomatoes, undrained
8 oz. can tomato sauce
1 tsp. sugar
1 Tbsp. smoked paprika
1/2 tsp. caraway seed
1/4 tsp. pepper
1-1/2 cups uncooked rotini pasta
Preparation:
In 12'; skillet, heat oil and cook steak strips over medium high heat, until browned, about 3-5 minutes. Stir in all remaining ingredients except for pasta. Stir well, then bring to a boil. Add rotini pasta. Reduce heat to medium and cook, covered, for 10-15 minutes until pasta is tender, stirring frequently. 4 servings
All-in-one
Ingredients:
1 pound lean ground round, browned and drained
1 package (7 ounces) elbow macaroni, cooked and drained
1 cup finely chopped celery
1 cup chopped green pepper
1 cup finely chopped onion
2 cups thinly sliced carrots
1 can (28 ounces) diced tomatoes, undrained
1 can (8 ounces) tomato sauce
1 teaspoon chili powder
1/4 teaspoon pepper
Directions:
Combine all ingredients in a saucepan; bring to a boil over medium heat.
Reduce heat; cover and simmer for thirty minutes.
Add water to thin if desired.

Skillet Chops with Mushroom Gravy
Ingredients
1/2 cup dry bread crumbs
2 tablespoons grated Parmesan cheese
4 pork chops
1 tablespoon vegetable oil
1 (10.75 ounce) can condensed cream of mushroom soup
1/2 cup milk
Directions
Combine bread crumbs and Parmesan cheese in a large resealable plastic bag. Add chops two at a time, and shake to coat.
Heat oil in a large skillet over medium-high heat, and cook chops until brown on both sides. Remove chops from skillet, and reduce heat to medium.
Blend soup and milk in the skillet, stirring to scrape up the bits of breading left over from the chops. You can adjust the amount of milk depending on how thick you want the gravy to be (it will thin a bit during the cooking process). Bring to a gentle boil, increasing heat slightly if necessary. When soup mixture is bubbling, return chops to skillet.
Cover, and reduce heat to low. Simmer for 20 minutes, or until chops are cooked through.

1 pkg. (120 g) Stuffing Mix for Chicken

1/3 cup sour cream
Directions
Mix hot water, margarine and stuffing mix; set aside.
Cook chicken in nonstick skillet on medium heat 5 min. on each side.
Mix soup and sour cream; pour over chicken. Top with stuffing; cover. Cook on low heat 10 min. or until chicken is done (170潞F).

1 can (680 mL) pasta sauce
1 cup sliced fresh mushrooms

Brown meat in large deep skillet; drain. Add onions; cook until tender, stirring occasionally.
Add pasta, water and sauce. Bring to boil; cover. Simmer on low heat 15 min., stirring occasionally. Add vegetables; cook 5 min., stirring frequently.

4 small boneless skinless chicken breasts (1 lb.)

1 cup each: chopped green beans and red peppers

Fried rice, burgers......my boyfriend even made pizza on a skillet once (using it as a grill).
Keep grilling in mind too. It's usually more of the guys forte, but everything tastes amazing on the grill! In the summer, my bf and I make literally just about everything on the grill (even apple cobbler!) You can find all sorts of recipes online, or you can simply by a frozen version and let it warm over the grill.
There are tons of no-bake desserts you can buy at the grocery store (I think Jell-o makes them?) They're actually really good, and my personal favorite is the peanut butter cup. Anyway, if all else fails, offer to make dinner at your house, or cook at home, put it in portable containers, and just heat the stuff over the skillet once you get to his house. it also wouldn't hurt to invest in a crockpot or a toaster oven (they're only about 20 bucks), and they do everything an oven does

Southern Skillet Dinner
2 pounds ground beef
3 (15 ounce) cans sliced potatoes, drained
2 (10.5 ounce) cans cream of mushroom soup
1 (10 ounce) can whole kernel corn, drained
1 (10 ounce) can peas, drained
salt and pepper to taste
Brown beef in a large skillet over medium heat. Drain fat, and return skillet to stove. Stir in potatoes, cream of mushroom soup, corn, and peas. Sprinkle with salt and pepper. Cover, and simmer over low heat for 10 to 15 minutes.

Easy Greek Skillet Dinner
1/2 pound dried elbow macaroni
1 pound ground beef
2 cloves garlic, pressed or minced
2 medium carrots, quartered lengthwise and sliced
1 large zucchini, quartered lengthwise and sliced
1 1/2 tablespoons dried oregano leaves
salt and pepper
1 (10.75 ounce) can condensed tomato soup, plus
1 (10.75 ounce) can water
crumbled feta cheese (optional)
Bring a large pot of lightly salted water to a boil. Cook elbow macaroni for 8 to 10 minutes or until al dente; drain, and set aside.
Brown ground beef with garlic in a large skillet over medium heat. Strain off fat, if necessary. When meat is lightly browned, add carrots and cook until tender, about 5 minutes. Stir in zucchini and oregano, and continue cooking another 5 minutes. Season to taste with salt and pepper.
When vegetables are tender, stir in tomato soup, water, and prepared elbow macaroni, and cook for another 5 to 10 minutes. Serve with crumbled feta cheese on top, if desired.

Pork Chop Skillet Dinner
4 tablespoon olive oil or vegetable oil
4 bone-in pork chops, 3/4-inch thick
1 medium onion, chopped
1 cup uncooked regular long-grain white rice
1 (10.75 ounce) can Campbell's庐 Condensed Chicken Broth
1 cup orange juice
3 tablespoons chopped fresh parsley
4 orange slices
Heat oil in skillet. Add chops and cook until browned.
Add onion and rice and cook until rice is browned. Stir in broth, orange juice and 2 tablespoons parsley. Heat to a boil. Cover and cook over low heat 20 minutes or until done.
Top with orange slices and sprinkle with remaining parsley.

Italian Skillet: Pasta and Beef Dinner
1 pound ground beef
1 (26 ounce) jar spaghetti sauce
2 cups water
8 ounces uncooked rotini pasta
2 cup shredded mozzarella cheese
Brown ground beef in 12-inch skillet; drain.
Stir in Pasta Sauce and water. Bring to a boil over high heat. Stir in uncooked rotini and return to a boil. Reduce heat to medium and cook covered, stirring occasionally, 12 minutes or until rotini is tender. Remove from heat and sprinkle with cheese. Cover and let stand 5 minutes or until cheese is melted.

1 pound chicken breast halves - cut into bite-size pieces
4 tablespoon olive oil
1 cup milk
1 (10.75 ounce) can condensed cream of chicken soup
1 cup fresh sliced mushrooms

1 teaspoon onion powder
1/2 teaspoon ground black pepper

Tex Mex Skillet Lasagne
Ingredients:
1 lb. lean ground beef
1 onion, chopped
3 cloves garlic, minced
2 cups uncooked mafalda (mini lasagna noodles)
16 oz. jar pasta sauce (2 cups)
12 oz. jar salsa (1-1/2 cups)
1 cup water
1 Tbsp. chili powder
1 (15 oz) cans black beans, rinsed and drained
1 cup small curd cottage cheese
1 (8 oz.) pkg. cream cheese, softened
1/2 cup shredded Pepper Jack cheese
2 Tbsp. chopped fresh cilantro
1/2 tsp. cumin
1/2 cup Parmesan cheese
1 cup shredded Pepper Jack cheese
1-2 avocados, sliced
1/2 pint cherry tomatoes, chopped
Preparation:
In heavy skillet, brown ground beef with onions and garlic. Drain well. Stir in uncooked noodles, pasta sauce, salsa, water, chili powder, and drained beans. Bring to a boil, then lower heat, cover skillet, and cook for 15-17 minutes until noodles are al dente, stirring frequently.
Meanwhile, combine cottage cheese, cream cheese, 1/2 cup Pepper Jack cheese, cilantro, and cumin in small bowl until blended.
Spoon the cottage cheese mixture evenly over cooked mixture in skillet. Sprinkle with Parmesan cheese and 1 cup Pepper Jack cheese. Cover and cook 5 to 8 minutes until cheese is melted and mixture is hot. Remove from heat and uncover. Let stand 5 minutes before serving. Garnish with sliced avocados and chopped tomatoes. 6 servings
Chicken Lo Mein
Ingredients:
2 packages chicken flavor ramen noodle soup mix
3 cups boiling water
2 tablespoons cornstarch
2 cups chicken broth
1 red bell pepper, sliced
1 yellow bell pepper, sliced
3 cloves garlic, minced
2 cups snow peas
2 cups sliced mushrooms
2 tablespoons olive oil
1-1/2 pounds boneless, skinless chicken breasts, sliced
2 tablespoons low-sodium soy sauce
Preparation:
Break noodles into a large bowl, sprinkle with 1 seasoning packet and cover with boiling water. Set aside. Combine cornstarch and chicken broth and set aside.
Prepare all the vegetables and the chicken. Heat 1 tablespoon oil in wok or large, heavy skillet. Stir-fry peppers, garlic, snow peas and mushrooms until crisp tender. Remove from skillet and set aside.
Add remaining 1 tablespoon oil to wok and heat. Stir-fry chicken slices until cooked, about 3-5 minutes.
Stir chicken broth and cornstarch mixture and pour into skillet; bring to a boil. Return vegetables to skillet along with soy sauce. Drain noodles and add to skillet. Stir-fry until mixture is heated through and sauce has thickened. 6 servings.
Skillet Paella
Ingredients:
1 onion, chopped
1 yellow bell pepper, chopped
1 Tbsp. olive oil
1-3 tsp. curry powder
14 oz. can ready to serve chicken broth
12 oz. pkg. frozen peeled cooked shrimp, thawed, tails removed
1 cup frozen peas
6 oz. pkg. couscous
Preparation:
In large saucepan saute onion and bell pepper in olive oil until crisp tender. Add broth, curry powder, shrimp, and peas. Bring to boiling, then add couscous and stir well. Cover and remove pan from heat. Let stand 4-6 minutes, covered, until liquid is absorbed and couscous is tender. Stir and serve. 4 servings
Skillet Goulash
Ingredients:
1 Tbsp. oil
1 lb. beef sirloin steak, partially frozen, sliced into thin strips
1 onion, chopped
1 green bell pepper, chopped
1-1/2 cups water
14 oz. can diced tomatoes, undrained
8 oz. can tomato sauce
1 tsp. sugar
1 Tbsp. smoked paprika
1/2 tsp. caraway seed
1/4 tsp. pepper
1-1/2 cups uncooked rotini pasta
Preparation:
In 12'; skillet, heat oil and cook steak strips over medium high heat, until browned, about 3-5 minutes. Stir in all remaining ingredients except for pasta. Stir well, then bring to a boil. Add rotini pasta. Reduce heat to medium and cook, covered, for 10-15 minutes until pasta is tender, stirring frequently. 4 servings
All-in-one
Ingredients:
1 pound lean ground round, browned and drained
1 package (7 ounces) elbow macaroni, cooked and drained
1 cup finely chopped celery
1 cup chopped green pepper
1 cup finely chopped onion
2 cups thinly sliced carrots
1 can (28 ounces) diced tomatoes, undrained
1 can (8 ounces) tomato sauce
1 teaspoon chili powder
1/4 teaspoon pepper
Directions:
Combine all ingredients in a saucepan; bring to a boil over medium heat.
Reduce heat; cover and simmer for thirty minutes.
Add water to thin if desired.

Skillet Chops with Mushroom Gravy
Ingredients
1/2 cup dry bread crumbs
2 tablespoons grated Parmesan cheese
4 pork chops
1 tablespoon vegetable oil
1 (10.75 ounce) can condensed cream of mushroom soup
1/2 cup milk
Directions
Combine bread crumbs and Parmesan cheese in a large resealable plastic bag. Add chops two at a time, and shake to coat.
Heat oil in a large skillet over medium-high heat, and cook chops until brown on both sides. Remove chops from skillet, and reduce heat to medium.
Blend soup and milk in the skillet, stirring to scrape up the bits of breading left over from the chops. You can adjust the amount of milk depending on how thick you want the gravy to be (it will thin a bit during the cooking process). Bring to a gentle boil, increasing heat slightly if necessary. When soup mixture is bubbling, return chops to skillet.
Cover, and reduce heat to low. Simmer for 20 minutes, or until chops are cooked through.

1/4 cup non-hydrogenated margarine, melted
1 pkg. (120 g) Stuffing Mix for Chicken
4 small boneless skinless chicken breasts (1 lb./450 g)
1 can (284 mL/10 oz) condensed cream of mushroom soup
1/3 cup sour cream
Directions
Mix hot water, margarine and stuffing mix; set aside.
Cook chicken in nonstick skillet on medium heat 5 min. on each side.
Mix soup and sour cream; pour over chicken. Top with stuffing; cover. Cook on low heat 10 min. or until chicken is done (170潞F).

BarBQ Chicken Supper
Ingredients
4 small boneless skinless chicken breasts (1 lb.)
1 tsp. oil 1/2 cup Chicken %26amp; Rib BarBQ Sauce
3 cups frozen hash browns
3/4 cup thinly sliced carrots
1/2 cup water
1 cup each: chopped green beans and red peppers
Directions
Cook chicken in hot oil in large nonstick skillet on medium-high heat 3 min. on each side or until lightly browned on both sides. Add barbecue sauce.
Push chicken to one side of skillet. Add potatoes and carrots to other side of skillet; cook 3 min., stirring frequently. Stir in water.
Spread chicken out in skillet; spoon potato mixture evenly over chicken. Top with the beans and peppers; cover with lid. Reduce heat to medium-low; simmer 10 to 12 min. or until vegetables are crisp-tender and chicken is no longer pink in centres and juices run clear.
