Easy Chicken and Dumplings

2 tablespoons butter

1 large yellow onion, chopped

2 cloves garlic, minced

1 pound boneless chicken thighs or breasts

1 cup low-sodium chicken broth

1 (10 ounce) package frozen mixed vegetables

1/2 teaspoon dried sage

1/2 teaspoon dried thyme

1 1/2 cups self-rising flour

3 tablespoons chopped fresh parsley

3 tablespoons shortening

2/3 cup buttermilk or regular milk

Melt butter in a large saucepan or pot over medium heat. Saute onion and garlic for 5 minutes, then stir in chicken and saute until browned, about 7 to 10 minutes. Stir in broth, vegetables, sage and thyme; mix all together and let simmer over medium heat while preparing the dumplings.

In a medium bowl, mix flour and parsley together. Add shortening and stir mixture into a coarse, mealy dough. Stir in buttermilk, a little bit at a time, until dough holds together and is soft but firm. (If needed, add up to 2 tablespoons more buttermilk).

Bring chicken mixture to a boil over medium high heat and drop round spoonfuls of dumpling mixture on top (do not let dumplings touch each other). Reduce heat to low, cover pot and let simmer for 10 to 12 minutes.

As for a hot dish, Spaghetti and Meatballs is very easy dish. Just buy spaghetti, pop it in boiling water, strain it when it's cooked, pour some sauce on it. Get some ground meat roll it into balls and heat it up in a pan. Then combine everything.

As for a cold dish, try Bruschetta, a delicious tomato dish on bread.

(I love Italian food.)

Epicurious.com is a great resource for easy recipes.
You could make a really simple roasted chicken that would feed 5 people. Just buy a meat thermometer to be on the safe side!!

Buy whole chicken, take gizzards out, (don't be scared, they are in a bag inside of chicken, you don't have to touch them) rinse, and pat dry.

Rub the chicken with salt, pepper, fresh rosemary and soft butter.

Prepare any stovetop stuffing. I like Pepperidge Farm Herbed Stuffing. This is simple too, just add water, butter, and stir.

Stuff the chicken with stuffing, and maybe add some lemon wedges if you want to get fancy.

Wash and cut red potatoes into quarters, and do the same with 2 med. size yellow onion. Peel and chop 1 lg, or 2 small carrots, and place all veggies in pan around stuffed chicken. Add enough chicken stock (you can use water too, but I like boxed chx. stock) to submerge veggies about 1/4 of the way. While cooking chicken according to it's packagings cooking time, check it about every 15 minutes, and baste the chicken. This means take a baster (you can use a ladel too if you don't have a baster) and get the juices from the pan and pour over the chicken!! In about an hour and a half or so, your whole family will be super impressed with your skills!!
Sloppy Joes are really easy. I go to wal-mart and get a 50 cent package of sloppy joe mix and all you need is a pound of ground beef, tomato paste or tomato sauce (to use tomato sauce you would use 15 oz of it), water, and buns. This recipe is awesome and I'm sure your family will love it because mine does.
well first, check for leftovers

salads arent too hard to make, you should try making a salad that contains lettuce, cucumbers, mandarin oranges (or apples), feta cheese, cranberries and walnuts. it my favorite salad and its really delicious and really fancy.

another thing is gallopinto. if you know how to make rice and beans, make them, and then mix them together in a big skillet untill they are nice and toasted (drain the beans first). its a side dish made in every latin american country and i love it.

also, if you can drive, i reccommend going to safeway and getting a roasted chicken or something. all three of these things go perfect with one another.

i hope this helps!

Chicken and Stuffing Casserole --

8 ounces dry bread stuffing mix
