Rigatoni With Sausage and Vegetables

8 oz. (3 C.) uncooked rigatoni (pasta tubes with ridges)

1 lb. Italian turkey sausage links, cut into 1/2-inch slices ( I use Sweet or hot italian with the casings removed )

1 small onion, cut into thin wedges

1 garlic clove, minced

1 (9 oz.) package frozen sugar snap peas in a pouch, thawed

1 medium yellow bell pepper, cut into 1-inch pieces

1/2 C. chicken broth

1 t. dried basil leaves or 1 T. chopped fresh basil

1/2 t. salt

1/8 t. pepper

4 Italian plum tomatoes, coarsely chopped

2 T. olive or vegetable oil

shredded mozzarella cheese

In Dutch oven or large saucepan, cook rigatoni to desired doneness as directed on package. Drain; return to Dutch oven. Cover to keep warm.

Meanwhile, cook sausage in large skillet over medium-high heat for 5 minutes, stirring occasionally. Drain.

Add onion and garlic; cook and stir 3 minutes. Add sugar snap peas, bell pepper, broth, basil, salt and pepper; mix well. Bring to a boil. Reduce heat; simmer 3 or 5 minutes, or until sugar snap peas are crisp-tender and sausage is no longer pink.

Add tomatoes and oil; cook over medium-low heat for 3 to 5 minutes or until mixture is bubbly, stirring occasionally.

Add to cooked rigatoni; toss gently to mix. Sprinkle with cheese.

Makes 4 (2-cup) servings.

Impossible Ham and Swiss Pie

2 cups fully cooked ham, cubed

1 cup shredded swiss cheese (4 oz)

1/3 cup chopped green onions

4 eggs

2 cups milk

1 cup Bisquick baking mix

1/4 teaspoon salt (optional)

1/8 teaspoon pepper

Heat oven to 400ºF. Grease pie plate, 10x1-1/2 inches.

Sprinkle ham, cheese and onions in plate. Beat remaining ingredients until smooth, 15 seconds in blender on high or 1 minute with hand beater. Pour into plate.

Bake until golden brown and knife inserted in center comes out clean, 35-40 minutes.

Cool 5 minutes.

Fast Pork Chops with Apples Recipe

3 medium tart apples, such as Granny Smith

1/4 t. ground nutmeg

1 t. vegetable oil

4 pork chops

1/4 t. salt

freshly ground black pepper to taste

1/4 C. apple cider or juice

Peel, core and thinly slice apples, and sprinkle with nutmeg.

In non-stick skillet, heat oil over medium-high heat, then add pork chops, salt and pepper. After about 5 minutes, turn chops to brown other side. After 5 minutes, add apples and cover. Lower heat and simmer another 5 to 10 minutes. Thickness of chops will determine cooking time; center of chop should be white, and juices should run clear.

Remove chops from pan to a serving plate. Pour in juice or cider, turning up heat as you stir juice and apples, then spoon onto pork chops.

Saute onion in the same pan, adding a small amount of oil if needed.

After sauteing the onion, remove from skillet and add flour for gravy. Stirring constantly, brown the flour. Stir water into the browned flour to make the gravy.

Add boullion cubes, salt and pepper. Thin with water for desired thickness.

Add Kitchen Bouquet if gravy isn't brown enough.

When gravy is made, put steaks and onion in gravy. Simmer for about 30 to 45 minutes, checking often and adding water to keep gravy from becoming too thick.

chili! This site has some good and quick dinner recipes.

http://www.chili-everyway.com/easy-chili…

I like to double the recipe then freeze the leftovers for a future dinner. Sometimes I get 2 dinners depending on how many people and the amount of chili the recipe makes.

Very tasty and you can vary what you make. You can do chicken chili one time then use beef the next. You can also change out what beans you use or make it with no beans. The site gives you lots of variations to try so it is not the same old thing every time.

Good luck
What about a dinner of appetizers? Stuffed mushrooms, veggies and dip, scallions wrapped with cream cheese slathered salami. They have puff pastry cutouts in the freezer section that you either bake (because they have filling) or fill and bake. Takes about a half hour. They also have appetizers that you can just bake off in the freezer section.

Make a variety of options with maybe two or three of each thing and it could be pretty neat and different.
