i was wondering if someone could tell me a good recipe i could whip up?Any good lunch and dinner recipes?
for lunch i like eating a turkey sandwich with chips. It sounds weird but its good.
I use mayo, turkey, cheese (marble or cheddar) and plain ruffle chips. :)Any good lunch and dinner recipes?
Pasta salad
1 green bell pepper
1 red bell pepper
1 head of cauliflower
1 head of broccli
1 box of tri colored rotini noodles
1-2 TBsp real mayo
cooking oil and water
salt and balck pepper
Boil the noodles, water and oil in a pot until the noodles are tender but not mushy..(The oil just keeps them from sticking together)..Chop the broccli and cauliflower into small bite size pices and boil until tender..Mean while, finely dice the bell peppers and add to a large bowl. You can add the mayo and season with the salt and pepper to your liking..Once the noodles and broccli/cauliflower are done rince them off in cool water and then add to the large bowl..Mix and serve or let it chill in the fridge to get cold
Variations:
Add onion, celery, tuna or diced cooked chicken to make a complete meal..
Real simple to make once you've done it several times..I am making it tonight..
CHICKEN PASTA SALAD
3 Chicken Breasts
2 cups Rotini or Shell Pasta (cooked, rinsed and cooled)
1/2 Red Pepper
1/2 Green Pepper
8-10 cherry tomatoes (halved)
1/4 cup Feta cheese crumbled (optional)
1/4 Ceasar Salad Dressing (more or less to taste and to coat)
Cook chicken until no longer pink in middle. Chop into small pieces. Chop peppers and add to tomatoes in large bowl. Add chicken, pasta and feta to large bowl. Add Ceasar salad dressing and mix well. Refigerate until needed.
HOMEMADE PIZZA
2 cans tomatoes, undrained and chopped
2 green peppers, chopped
2 onions, chopped
2 tsp. salt
2 tsp. sugar
1 tsp. dried oregano
1/8 tsp. pepper
Combine and simmer over low heat 1 hour, stirring occasionally. Cook ground meat (1 1/2 pounds) with salt until no longer pink. Drain, spoon tomato mixture over crust. Add meat, olives, etc. Bake at 450 degrees for 10 minutes. Add Mozzarella and Cheddar cheese. Bake 10 more minutes. Top with Parmesan.
CRUST FOR HOMEMADE PIZZA:
1 c. boiling water
2 tbsp. shortening
1/4 tsp. salt
1 pkg. yeast (fast acting)
3 to 6 c. flour
Mix all ingredients, divide in two and place in pizza pan. Cook for 10 minutes and remove and place sauce and cheese on top.
CHOCOLATE CHIP COOKIES
1/3 cup butter flavored Crisco
1/4 cup lard (may substitute Crisco)
3/4 stick butter
1 cup white granulated sugar
1/3 cup dark brown sugar, packed
1 Tablespoon blackstrap molasses
1/4 teaspoon ground ginger
1/4 teaspoon ground cinnamon
1/8 teaspoon allspice
2 eggs
1 teaspoon baking soda
1/4 teaspoon baking powder
2 tablespoons rum
1 teaspoon vanilla
1/2 cup raisins and/or craisins
3/4 cup chopped pecans, walnuts, or macadamias
1/2 cup semi-sweet chocolate chips
1 scant teaspoon salt
2 1/4 cups flour
1/3 cup oatmeal
In a mixer, combine Crisco, lard, and butter, and whip until light. Crisco and lard are combined to create a cookie which doesn't spread too thinly, has a slightly crispy exterior, and a soft chewy center. The butter is for flavor. Substitute at your own risk!
Slowly add the white granulated sugar and continue beating until very light and fluffy. Stir in the spices, baking powder and salt. Add the two eggs and mix only to combine. In a separate bowl, add hot water to the brown sugar along with the baking soda. When dissolved, add this to the sugar and spice mixture to combine. Add the oatmeal.
Slowly stir in the flour, stopping occasionally to scrape down the sides of the bowl. Stir in the rum and vanilla. Limit your mixing of the dough to about one minute once the flour has been added, in order to avoid a tough cookie. Stir in the chocolate, nuts, and raisins.
Using two spoons, drop by rounded tablespoonfuls onto greased cookie sheets and bake in pre-heated 375 degree oven on the middle shelf until cookies are lightly browned along edges and barely golden on top. This will take about 7-10 minutes depending on the size of each cookie and the temperature of your oven
