What are some good cold dinner recipes?

It is super hot where I live and I can't think of anything to make for dinner that isn't hot to eat. Any ideas? Thanks!What are some good cold dinner recipes?
COLD PASTA AND CHICKEN SALAD OR SHRIMP


SALAD





8 oz. vermicelli pasta noodles


1 c. French dressing


10 fresh sliced mushrooms


1 c. fresh broccoli florets, blanched


10 slices cherry tomatoes


Ripe olives (sliced)


1 can sliced artichoke hearts


2 c. cooked cubed chicken (or boiled shrimp)


1/3 c. fresh basil (or 1 1/2 teaspoon dried)


1/3 c. toasted pine nuts, optional





Cook pasta, transfer to mixing bowl. Add 1/3 of the dressing and toss well. Cool and chill 3 hours. In another bowl, mix mushrooms, broccoli, tomatoes, olives, artichokes with remaining dressing. Chill. Add chicken, basil, nuts. Mix with pasta.What are some good cold dinner recipes?
I live in Miami, and cooking can feel like quite a chore most of the year. Here are some things I do...





Make use of the crockpot. If you don't have one, get one. It doesn't heat up your kitchen.





Make use of those pre-roasted chickens at your supermarket. At about 5 bucks for a whole chicken, it's a steal. You can shred it, add some barbeque sauce, and have pulled chicken sandwiches. You can also add to a quick stir-fry.





Eat salads. They're healthy and versatile. Those precooked shrimps are great toppers.
Chicken Salad


3 c diced, cooked chicken


1 1/2 c diced celery


1 T lemon juice


1/2 t salt


1/2 c mayonnaise or salad dressing


Crisp lettuce


tomato wedges


cucumber slices





Mix chicken and celery in a bowl. Mix mayo or salad dressing and lemon juice with salt in a bowl. Whisk and pour over chicken mixture and toss. line salad bowl with lettuce. Pile chicken mixture in center.Arrange tomato wedges and cucumber slices around the edge. Serves 6.





Ham Spread


2 cans mushroom stems and pieces, drained


1 T butter


2 cans {4 1/2 ounces each} deviled ham spread


1/4 c chopped pecans


2 T mayonnaise or salad dressing


1 t horseradish


1/4 t garlic salt


Snack size rye bread





Cook and stir mushrooms over low heat in butter about 5 minutes and cool. Stir in remaining ingredients except bread. Refrigerate 3 hours. Garnish with snipped parsley. Serve with bread. Yield 2 cups spread.
Macaroni Salad, some cold soups, a chicken salad, just salad, a bunch of stuff like that :) I am extremely jealous of your hot weather!!
Potato salad and boiled eggs(let the eggs cool off tho) hope this helps ^_^

Ingredients





* 6 ounces garlic-flavored croutons


* 1/2 teaspoon ground black pepper


* 1/2 teaspoon cayenne pepper


* 1 teaspoon chili powder


* 1 teaspoon dried thyme


* 1/2 onion, roughly chopped


* 1 carrot, peeled and broken


* 3 whole cloves garlic


* 1/2 red bell pepper


* 18 ounces ground chuck


* 18 ounces ground sirloin


* 1 1/2 teaspoon kosher salt


* 1 egg





For the glaze:





* 1/2 cup catsup


* 1 teaspoon ground cumin


* Dash Worcestershire sauce


* Dash hot pepper sauce


* 1 tablespoon honey





Directions





Heat oven to 325 degrees F.





In a food processor bowl, combine croutons, black pepper, cayenne pepper, chili powder, and thyme. Pulse until the mixture is of a fine texture. Place this mixture into a large bowl. Combine the onion, carrot, garlic, and red pepper in the food processor bowl. Pulse until the mixture is finely chopped, but not pureed. Combine the vegetable mixture, ground sirloin, and ground chuck with the bread crumb mixture. Season the meat mixture with the kosher salt. Add the egg and combine thoroughly, but avoid squeezing the meat.





Pack this mixture into a 10-inch loaf pan to mold the shape of the meatloaf. Onto a parchment paper-lined baking sheet, turn the meatloaf out of the pan onto the center of the tray. Insert a temperature probe at a 45 degree angle into the top of the meatloaf. Avoid touching the bottom of the tray with the probe. Set the probe for 155 degrees.





Combine the catsup, cumin, Worcestershire sauce, hot pepper sauce and honey. Brush the glaze onto the meatloaf after it has been cooking for about 10 minutes.
