Stir Fried Chicken and Bok Choy
Prep and cook time: 20 min.
Ingredients:
1 cup chopped scallion
2 TBS fresh minced ginger
2 skinless, boneless chicken breasts cut into bite size pieces
1 陆 cups sliced fresh shiitake mushrooms
4 cups chopped bok choy
2 TBS soy sauce
1 TBS rice vinegar
salt and white pepper to taste
pinch of red pepper flakes
Directions:
Healthy stir fry scallion in a stainless steel wok or saut茅 pan for 2 minutes and add ginger. Continue to stir fry for another minute and add chicken stirring constantly.
After about 2-3 minutes, add shiitake mushrooms and bok choy. Continue to stir fry for another 3-4 minutes and add soy sauce, rice vinegar, salt and pepper. Serves 4.What are good healthy low calorie lunch and dinner recipes?
Spinach Salad
8 ounces young spinach
2 large eggs
8 pieces thick-sliced bacon, chopped
3 tablespoons red wine vinegar
1 teaspoon sugar
1/2 teaspoon Dijon mustard
Ingredients Kosher salt and freshly ground black pepper
4 large white mushrooms, sliced
3 ounces red onion (1 small), very thinly sliced
Directions Spinach
Remove the stems from the spinach and wash, drain and pat dry thoroughly. Place into a large mixing bowl and set aside.
Place the eggs into an electric kettle and cover with cold water by at least 1-inch. Turn the kettle on. Once the water comes to a boil, the kettle will turn itself off. Leave the eggs in the water for 15 minutes. Remove and peel off the shell. Slice each egg into 8 pieces and set aside.
While the eggs are cooking, fry the bacon and remove to a paper towel to drain, reserving 3 tablespoons of the rendered fat. Crumble the bacon and set aside.
Transfer the fat to a small saucepan set over low heat and whisk in the red wine vinegar, sugar and Dijon mustard. Season with a small pinch each of kosher salt and black pepper.
Add the mushrooms and the sliced onion to the spinach and toss. Add the dressing and bacon and toss to combine. Divide the spinach between 4 plates or bowls and evenly divide the egg among them. Season with pepper and serve immediately.
My favorite is Tomato/Basil salad - you can eat it plain or put it in a pita with some hummus
Tomato/Basil Salad:
1/4 cup vegetable oil or olive oil
1 1/2 teaspoon red wine vinegar
dash of salt
1/4 teaspoon pepper
4 large tomatoes, chopped into bite sized pieces
1 medium size sweet onion, thinly sliced
1/4 cup chopped fresh basil (or you can buy a tube of basil paste and use that)
Hummus (or you can buy it in the store if you don't want to make it)
1 16 oz can of chickpeas or garbanzo beans
1/4 cup liquid from can of chickpeas
3-5 tablespoons lemon juice (depending on taste)
1 1/2 tablespoons tahini
2 cloves garlic, crushed
1/2 teaspoon salt
2 tablespoons olive oil or vegetable oil
Another good recipe is honey mustard chicken.
All you do is mix mustard and honey in a bowl until you find the right taste for you. I like to use regular yellow mustard AND a mustard with the mustard seeds in it. Then add a dash of pepper. Coat chicken breasts in it and cook at 350F for 30 minutes. Take the chicken out and cut it to see if they are done. If the chicken is pink then cook it longer - if it is white it's done. After you take it out of the oven, coat it again with the honey mustard sauce. You can pair it with a salad or a baked potato or the tomato basil salad!
