Good luck to you!!!!What are some good dinner recipes for starters?
'Tian aux jus tomates'.

In a food processor, blend 12 large softish tomatoes, 2 cloves of garlic 4 sticks of celery, 1 head of fennel, 1 sprig of thyme and a few leaves of basil.

When it is blended to a very juicy pulp, pour into a collander (that has been lined with muslin cloth) and allow to drain, into a clean clear bowl.

Place this into a fridge and let drain till vertually dry (do not squeeze).

Now to make the tian... Take 8 small firm tomatoes, cut a cross in the top and place in boiling water (30secs). Have a bowl of Iced water ready and plunge the tomtoes in to stop cooking.

With a pointed knife... slowly carefully peel the tomatoes.

Cut them into quarters and discard the seeds.

Cut 1 large aubergine/eggplant and 2 courgettes/zuchinis to a very small dice (Saute them gently in olive oil, season and allow to cool).

Take a smallish round mould and line the bottom/sides of the inside.

Spoon in the cooled sauted vegies and top the mould with more tomato quarters.

The tomato jus should be almost clear... but PACKED full of flavour.

Chill your plates till needed, then gently spoon over the cold jus and finish by floating a few delicate fennel (kept from the whole fennel) or dill leaves on the jus.

This dish tastes 'Sublime'!

Pizza, you can make your own or buy the crust (pillsbury dough is good for that) then top it with sauce, cheese and whatever else you like. Also stir fry chicken with vegetables is easy, just cut up chicken and cook in a pan until done, add some fresh vegetables, and heat through. Spaghetti, Tacos, and Meatloaf are all pretty easy too.

See if your mom has a Betty Crocker Cookbook, it tells you everything you need to know about cooking and lots of great easy recipes to get you started. Have fun!

Tomato Soup

Recipe Ingredients

1lb tomatoes

2 pints stock

1 stick celery

1 onion

1 carrot

2 or 3 bacon rinds

1oz butter

1oz flour

2 teaspoons finely chopped basil

Salt and pepper to season

A pinch of sugar

Tomato soup Preparation and cooking

Begin by peeling and chopping the onion and peeling and slicing the carrot. Then wash and chop the celery into smallish pieces and wash and slice the tomatoes. Now melt the butter in a large pan and add the bacon rinds, the onion, the carrot and the celery. Stir so that the vegetables are coated with the butter, then stirring occasionally simmer very gently for a few minutes to allow the vegetables to soak-up the butter, but not to brown.

Now add the sliced tomatoes, stock, salt and pepper. Put the lid on the pan and bring to the boil, then simmer gently for approximately one hour, stirring occasionally. Next check that the vegetables are tender.

Then, over a basin, press the soup through a sieve, to extract the pips, the skins and the bacon rind. In a small basin mix the flour with a little water, to make a smooth paste and add this to the soup in the basin, add the chopped basil. Rinse-out the pan and then return the soup to the pan.

Stirring continuously bring the soup to the boil and then let the soup boil for three minutes. Taste to see if the soup needs a little more seasoning and add if needed, add the sugar, stir and serve.

If you feel the soup is too thin remove the soup from the heat, mix together a little more flour and water, add this to the soup, return the soup to the heat and re-boil.

If you think that the soup is too thick, remove the soup from the heat and add a little more stock, stir and reheat.
