One of my family's favorites is quick and easy, tasty and filling.

I make dinner for 4 most of the time.

Four to six large potatoes. Choose potatos the size you most enjoy in baked potatos.

One canned ham, we use Black Label brand, which ever you prefer is fine, you may also use a fresh, uncanned ham.

Four cups of Mild Cheddar cheese. Substitue any strength of cheddar your family likes. To jazz the dish up a bit, I like to use a blend of cheeses, like Kraft's Mexican blend.

Cut the potatos and ham in large cubes, about the size that one or two can be stabbed with a fork at a time.

Begin to lightly brown the potatos in a skillet or wok with either peanut oil or olive oil, which ever you prefer.

Once the potatos begin to sweat, add the cubed ham. Let them cook together and keep stirring to a minimum, just enough to turn the mixture and keep it from burning. Cover the skillet with a lid, loosly and allow the mix to steam together. The potatos will soften and both will begin to brown nicely and the flavors will combine.

Just before they cook through, take them off the stove and pour them into a cassarole dish. Cover with two cups of the cheese and gently fold. Next, pour the remaining cheese over the top and pop it the preheated oven. Allow the cheese to melt and just lightly brown. Take out of the oven and let stand, covered for a few minutes and serve.

In my house, it's safe to say that I don't have to do the dishes after cooking up this one.

It quick and easy, everyone is filled up and they love you! No one ever seems to have room left for dessert!

I hope you and your family will enjoy this dish.
Ok...you HAVE to try this because I just started cooking from easy recipes and this one is a HUGE hit at my house.
