Dinner recipes under 300 calories?

I'm trying to find some dinner recipes to cook for under 300 calories.

Unfortunately I'm also cooking for my family who are not dieting and don't want to be served diet meals.

Any suggestions for a WHOLE MEAL for under 300 cal? Preferably not a vegetarian meal, they like meat.

Compromise. Sigh.

I'm not a very good cook, by the way, so the simpler the better!Dinner recipes under 300 calories?

1 chicken breast per person diced

1 onion finely diced

2 cloves garlic

3 tins crushed tomatoes and 5 fresh tomatoes diced

chilli to taste or Tabasco

Make sure that you cut the chicken against the grain so it is tender.

Heat oil in a pan

add garlic and onion sweat until transparent

Add bacon and chicken and stir occasionally until cooked through

Add fresh and tinned tomatoes and heat through.

By now the pasta should be cooked, add chilli or Tabasco to taste season with salt and pepper, drain the pasta put on plates and top with tomato/chicken mix.

Enjoy

Even though you didn't ask for a vegetarian recipe this can be made into one by eliminating chicken and bacon and substituting mushrooms.

I don't cook by calories, I do it by food group.

For dinner most meals are grilled or baked chicken, turkey or fish. A few spices, a very little olive oil or you could use chicken broth or even water if you need a little moisture in the pan. I steam vegetables in the microwave--several companies make the steam-able bags of veggies, and one bag works for my family. I rarely have pasta, rice, or

potatoes at dinner. When I do, I don't add sauces or butter,

just a little Mrs. Dash or something. It is very hard

to cook for the family when you are dieting. Try to get them to think of it as eating more healthfully, and make changes slowly. Eat a half portion of what you would usually eat. Good Luck!
