Any ideas with chicken or fish maybe.

20 oz baking potatoes


1 tbsp vegetable oil


1 tsp vegetable oil


3/4 tsp paprika


1/3 c dry bread crumbs


2 tsp dry bread crumbs


3/4 tsp salt


1 pinch ground red pepper


1 20 oz fillet sole





Preheat oven to 450. Spray 15x10'; jelly-roll pan with nonstick cooking


spray.





Cut potatoes into halves, then cut halves itno 3 wdges each: place in


medium bowl. Sprinkle potatoes with 1 tsp. oil and 1/4 tsp. prprika; toss


to coat. Place coated potato wedges in a single layer in one side of the


prepared pan. Bake 15 minutes, until just tender. Remove potatoes from


oven. Leave oven on.





Meanwhile, in shallow bowl or pie plate, combine bread crumbs, salt,


pepper, and the remaining 1/2 tsp. paprika. With firk, stir int he


remaining 1 tbsp. oil, blending until crumbs are evenly moistened. Press


fillets into crumb mixture, one at a time, turning to coat both sides


(fillets will not be completely coated). Place coated fillets in a single


layer in pan with potatoes. Bake 12 minutes, until fish flakes easily


when tested with fork and potatoes are browned and tender.

Fish Baked in Lettuce Pockets (2 PTS)

6 large or 12 small lettuce leaves*


1 medium carrot -- shredded


1 small zucchini -- shredded


1 1/2 pounds fresh or frozen (thawed) fish fillets -- cut into 6 serving


1 piece **


1 teaspoon dried marjoram leaves


Salt and pepper to taste


2 tablespoons margarine or butter





1.Heat oven to 400掳. Place a few lettuce leaves at a time in hot water. Let


stand 1 to 2 minutes or until wilted; drain.





2.Mound a portion of the carrot and zucchini near stem end of each lettuce


leaf. Place 1 piece fish on vegetables. Sprinkle with marjoram, salt and


pepper; dot with margarine.





3.Fold lettuce leaf over fish; place seam side down in ungreased rectangular


baking dish, 13x9x2 inches. (Vegetables should be on top of fish.) Cover and


bake 25 to 30 minutes or until fish flakes easily with fork.





*6 pieces aluminum foil, about 12x8 inches each, can be substituted for the


lettuce leaves. Place 1 piece of fish on center of each piece foil; mound a


portion of the carrot and zucchini on each piece of fish. Fold foil over


fish and vegetables; seal securely. Place seam side up in baking dish. Do


not cover.





**If using 12 small lettuce leaves, cut fish into 12 pieces.


Microwave Directions:





Prepare as directed (do not use aluminum foil substitution)--except place


lettuce packets seam sides down in rectangular microwavable dish, 11x7x1 1/2


inches. Cover with plastic wrap, folding back one corner to vent. Microwave


on High 9 to 10 minutes, rotating dish 1/2 turn after 4 minutes, until fish


flakes easily with fork.





1 Serving: 100 calories (20 calories from fat); 2 g fat (1 g saturated); 55


mg cholesterol; 95 mg sodium; 2 g carbohydrate (1 g dietary fiber); 19 g


protein.

Taco soup - I know it is gauche but you need a crockpot:





Chicken breasts


can of tomatoes


can of black beans


taco seasonings


can of chicken broth





Throw it in crockpot. Cook until breasts are done (maybe 8 hours low) Serve with shredded cheese, crumbled taco chips on top.
