What are some good everyday dinner recipes?
Turkey Meatloaf
1 package of ground turkey (not just the breast)
1/2 cup or so Italian style bread crumbs (may need less)
1/4 cup fresh grated parmesan cheese
1 egg white
3/4 cup of white onion diced
I cup chicken stock
1 tbsp tomato paste
1 tbsp fresh thyme
salt %26amp; pepper
red chili flake to taste
In a bowl mix turkey, salt, pepper, egg white, cheese, chili flake and half of the bread crumbs and set aside.
Cook the onion in some olive oil until translucent. Add the thyme and 3/4 of the chicken stock. Reduce one minute and add the tomato paste. Keep adding rest of stock until mixture is like relish. Set aside and cool. When mixture is cool add to turkey mix. If mixture is too sticky add bread crumbs as needed.
Make into loaf and place in greased baking dish.
Cook uncovered at 350 for about 45 minutes to a hour. Check after 45 minutes.
You can top mixture with ketchup before baking if you would like. Makes a great sweet glaze.
